@imagethief I'm out of date now, but as I recall: iAcces was great for HW input; iCosta, for straight Pinyin; WeFIT for 简体/繁体 switching.

@imagethief iAcces - but if you're just looking for a good Pinyin IME, go for WeFIT or iCosta. WeFIT's advantage is that it can do 繁体.

@papajohn Wade-Giles is actually good when it's used properly (almost never) -- easy to learn and in some ways more accurate than Pinyin.

@fuzheado Agreed on 3rd-party input potential for Chinese -- check out the iAcces [sic] IME, which goes WAY beyond the norm for IMEs.
